Pumpkin Oatmeal Cookies

Bake time: 12 min 350F

1 cup all purpose flour
1 tsp cinnamon
½ tsp salt
½ tsp ground nutmeg
¼ tsp baking soda
1 ½ cups packed brown sugar
½ cup (1 stick) butter, softened
1 egg
1 tsp vanilla
½ cup solid-pack pumpkin
2 cups uncooked old-fashioned oats
1 cup dried cranberries (optional) we used cherries

Heat oven to 350F
Line baking sheets with parchment paper..
Sift the flour, cinnamon, salt, nutmeg & baking soda, into a bowl.
Cream butter and sugars in large bowl with electric mixer at med speed – about 5 minutes
Beat in egg and vanilla.
Add pumpkin; beat at low speed until blended.
Beat in flour mixture just until blended.
Add oats; mix well.
Stir in cranberries.
Drop by rounded teaspoon, 1” apart on parchmented sheets.
Bake 9 to 11 minutes, until tops feel firm when lightly touched.
Cool for 2 minutes, transfer to wire rack to cool completely.
Makes: 2 to 3 dozen
