Butter Cookies by Cuzin Jane

Yea, I get the irony, butter cookies made from margarine.

Beat Together:
2 sticks margarine
1 cup sugar

Add:
2 egg yolks
Pinch of salt

Then add:
1 ½ tsp soda
1 ½ tsp lemon extract
2 ½ cups flour

Mix together. Form balls the size of walnuts. Dip top side in sugar. Press flat with fork. Bake at 350 for 8-10 minutes.
